Antioxidant peptides obtained by specific enzymatic hydrolysis

This week we are pleased to share with you information about an exciting line of research that our R&D department has been working on for several months with the aim of creating highly digestible protein hydrolysates that also contribute to improving animal health.
We are referring to the line of protein hydrolysates in the PRO Range, such as NBG EnteroPro and NBG DigestaPro, produced using the specific enzymatic hydrolysis NBG EnzyGoal.
Specifically, this week we will discuss antioxidant peptides, in which the key points for their functionality are certain specific chemical structures, a low molecular weight of the protein, and/or the recurring presence of certain amino acids such as hydrophobicity.
Thus, for example, some of the antioxidant peptides produced by specific hydrolysis that can be obtained from Sardinella aurita are peptides with the sequences WDDDDDMEK, VDDLEGSLEQE, VDDLEGSLEQEKK, DDLEGSLEQE, EQE, LTL, NAK, TER, or DEF.
